Quality of Ingriedients

I have been reading “Best Food Writing 2011” (which is a great book btw!). In an article called “Saints, Cakes, and Redemptions” Allison Parker writes about her quest to find something that was missing in her life and in that quest she bakes…mostly desserts. She found a recipe for a spice cake called phanouropita cake. The cake honors the Greek Saint Phanourios whose icon was lost for centuries and then found in perfect condition underneath rubble sometime in the 1500’s. Today, worshippers bake this cake when they want to find something that is missing. Matt and I really enjoyed our time in Puerto Rico and have been thinking a lot about our quality of life and want to find those things that are most fulfilling for our life together.

This cake is our start.
